wifiJust a note regarding the Internet.  The internal Internet in the park is good. The problem is with Telmex and Prodigy. We are trying very hard to get improved service. We understand that they are laying new lines and service should be improved soon. Sorry for any inconvenience.

HamburgerThe hamburger fund has purchased a large capacity air compressor for use by park residents. This 135 psi compressor will be available from the burger night trailer on a sign out basis and includes a tire inflation chuck and a ball/mattress inflater. This should help virtually everyone in the park, especailly at the end of the season when we all are gearing up for the trip home.

GREEK YOGURT -

There has been some discussion on Facebook about not being able to get Greek Yogurt in Mexico. Below is a recipe to make your own. It is very easy and tastes great. It also does not have all the additives and sugar added.

This is a basic recipe for homemade yogurt using commercial full fat milk. The yogurt is delicious as is, but can be made into the thick yogurt that is such a favorite in Greek cooking by straining.

Ingredients:

  • 1 quart (32 ounces) of full fat sheep or cow’s milk (pasteurized)
  • 2 tablespoons of previously homemade yogurt or plain unflavored yogurt with active live cultures
  • 2 tablespoons of full fat milk (same type)

Preparation:

Start with all ingredients at room temperature.

  1. Heat the milk just to the boiling point and pour into a non-metal container.
  2. Let cool to lukewarm (100-105F). A skin will form on top.
  3. Mix the 2 tablespoons of yogurt (homemade or commercial) with 2 tablespoons of milk.
  4. Add to the lukewarm mixture, carefully pouring down the side so that any skin that may have formed on top is not disturbed.
  5. Cover with a clean dishtowel and place on another towel in a warm, dry place for at least 8 hours (or overnight) until it thickens.Note:
      8 to 12 hours is best. The longer the yogurt coagulates beyond that time, the more sour the taste becomes.

Christmas Stocking Campaign off to a great start!

Thanks to all of you who came out for the launch of our Christmas stocking campaign on Wednesday night at Xaltemba restaurant. So far, we have collected many, many school supplies and pesos for the Education Resource Centre. Let’s keep the ball rolling! (or should we say, keep the stockings filled?). The campaign runs til Dec. 20.

Wine expert Antonio Moro of Vinos y Wine in Puerto Vallarta provided us with excellent red and white wines to sample. Some people preferred those from the Mision Santo Tomás winery in Baja California, others those from Cousiño Macul in Chile, and others took a liking to a sparkling wine from the French winery, Jean Dorsene. The wine combined with the variety of great Xaltemba appetizers and the music of Cathy Diaz left several people feeling quite festive .

Our sincere thanks go out to the following for their contribution to the night’s festivities:
